Ingredients You Need for Peppermint Bark [Vegan, Gluten-free, Paleo]

  • 1/2 cup coconut butter
  • 1/2 cup fresh mint, lightly packed and roughly chopped
  • 1 teaspoon pure peppermint extract
  • 2 tablespoons hot almond milk
  • 8 ounces vegan dark chocolate

How to Prepare Peppermint Bark [Vegan, Gluten-free, Paleo]

  1. Place the coconut butter in microwave-safe bowl and microwave it until it's smooth and creamy.
  2. Add the melted coconut butter, the chopped mint, and peppermint extract into a small food processor and turn it on until the mint is broken down.
  3. With the food processor running, stream in the hot almond milk until the mixture turns wet and crumbly. Then set this aside.
  4. Place the dark chocolate into a microwave-safe bowl and melt it using half power, 30-second intervals. Stir it between each interval until it's smooth and creamy.
  5. Line a baking sheet with parchment paper and pour the melted chocolate onto it. Spread the chocolate so it's an 11x8-inch rectangle that's a 1/2-inch thick.
  6. Crumble the mint mixture over the chocolate and lightly press the crumbles into the chocolate, leaving a little bit of the dark chocolate showing through.
  7. Refrigerate until firm its firm. This should take about 30-60 minutes.
